Watermelon Granita

Serves 6
Ingredients
4 pounds seedless watermelon cubes
1/3 cup water
1/3 cup sugar
1 Tbsp fresh lime juice
1 Tbsp grenadine or pomegranate juice
6 thin watermelon wedges for garnish
Preparation
Make a simple syrup by heating sugar and water over high heat, stirring until all the sugar has dissolved. Let cool.
Place watermelon and the lime juice in a blender and process until smooth, then add the syrup and grenadine juice.Press puree through a coarse strainer, pushing through the solids. Pour into a glass baking dish, freeze, stirring and scraping with a fork every 30 minutes, until all of the liquid has frozen. It should take about 3 hours until its freeze, you can keep it in freezer up to 2-3 days.

Refreshing and delicious!Serve watermelon granita in margarita glasses and garnish with the watermelon wedges.
