Wine Glazed Classic Baked Chicken

Serves 4
Ingredients

4 lb chicken legs
olive oil
salt
fresh ground pepper
1/4 cup of white wine for gravy
Preparation
Preheat oven to 400°F. Coat chicken in olive oil, sprinkle both sides of the chicken pieces with salt and black pepper. Arrange the pieces skin-side up in the roasting pan. Cook for 30 minutes at 400°F,then lower the heat to 350°F and cook for 25 minutes more until cooked. Remove chicken from roasting pan to a serving plate and cover with aluminum foil, let rest for 10 minutes before serving.
Gravy - take the roasting pan with its drippings and place on a medium setting on the stove top. Add a 1/4 cup of white wine to the pan to help deglaze the drippings from the pan,heat on medium temperature to reduce to thickness.
Serve with mashed potatoes or steamed rice and salad.
